Procedure

  1. Fill about one quarter of the jar with dried tops and cover with honey.
  2. Macerate about two weeks, then strain — intensely aromatic.

Po scedění chladně.

Silice a polární frakce v medu.

Notes

Maceration takes weeks.

Why it works

Hyssop has very strong volatiles; honey maceration concentrates aroma quickly. A shorter duration and a thinner layer of plant reduce the risk of harsh bitterness and unwanted changes on long storage.
