Procedure
- Collect inflorescences in full bloom from unsprayed meadows, pick them over, and air-dry briefly.
- Fill the jar about one third with flowers and top up with good honey; if needed, warm honey in a water bath so it flows.
- Macerate 3–5 weeks, strain, and store the honey sealed; flavour is usually mildly spicy.
