Procedure

  1. Chop young leaves, fill the jar about one third, and cover with apple vinegar.
  2. Macerate about two weeks, strain — a sharp salad dressing base.

Why it works

Leafy acid macerates can be rich in plant organic acids on top of the vinegar itself; low pH changes extraction equilibria. This is a sharp culinary condiment — use caution if you have reflux or peptic ulcer disease.
