Procedure

  1. Heat 2 tablespoons of ghee or oil in a small pan until it shimmers.
  2. Drop in a teaspoon of mustard seeds; once they pop, add half a teaspoon of cumin and 1–2 dried chillies.
  3. Add 8–10 fresh curry leaves — they sizzle and within 20–30 seconds turn glossy and fragrant; they must not brown.
  4. Pour the hot tadka at once over dal, sambar, rice or yoghurt and stir.
